Creamy Pasta with Minced Meat (Creamy Alfredo)
Ingredients:
250 grams of pasta (spaghetti or penne)
300 grams of minced meat
2 tablespoons of olive oil or butter
1 small onion, chopped
2 cloves of garlic, chopped
2 cups of cooking cream
½ cup of grated Parmesan cheese (or grated Romano cheese as an alternative)
½ cup of milk (optional if you want to reduce the cream)
A pinch of nutmeg (optional)
Salt and pepper to taste
Chopped parsley for garnish
Method:
Boil the pasta:
In a large pot, heat water and salt and boil the pasta until it is almost cooked (al dente).
Drain the pasta and take some of the cooking water aside.
Prepare the minced meat:
In a large pan, heat the oil or butter over medium heat.
Add the chopped onion and stir until soft.
Add the minced garlic and stir for a minute.
After that, add the minced meat and stir until it is cooked and slightly browned.
Season the meat with salt and pepper.
Prepare the cream sauce:
In the same pan with the meat, add the cooking cream and stir well.
If you need to reduce the consistency, add a little milk or water from boiling the pasta.
Add grated Parmesan cheese and a pinch of nutmeg (if you like it).
Stir the sauce until it thickens a little.
Assembling the dish:
Add the boiled pasta to the sauce and stir well until it is completely covered.
If the sauce is too thick, add a little of the cooking water.
Serving:
Serve the pasta hot in plates, and garnish with chopped parsley and a little extra cheese.

How to make Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce
Ingredients:
For the pasta:
400 grams of spaghetti
2 cups of fresh spinach (washed and roughly chopped)
½ cup of sun-dried tomatoes (sliced)
2 tablespoons of olive oil (you can use sun-dried tomato oil if available)
For the sauce:
1 cup of cooking cream
½ cup of yogurt
2 cloves of minced garlic
½ cup of grated Parmesan cheese (or Romano cheese as an alternative)
A sprinkle of hot pepper or paprika (optional)
Salt and pepper to taste
For garnish:
Additional grated cheese (optional)
Fresh basil leaves
Method:
Boil the pasta:
Heat water with salt in a large pot and boil the pasta until it is almost cooked (al dente).
Drain the pasta, and set aside a cup of the cooking water.
Prepare the sun-dried tomatoes and spinach:
In a large pan, heat the olive oil over medium heat.
Add the sun-dried tomatoes and stir for 2-3 minutes until their flavor is released.
Add the spinach and stir until wilted. Remove the mixture from the pan and set aside.
Prepare the cream sauce:
In the same pan, add a little oil if needed.
Add the minced garlic and stir for a minute.
Pour the cooking cream and yogurt and stir well.
Add the grated cheese and a pinch of hot pepper (if you like it), and stir until the sauce thickens a little.
Season the sauce with salt and pepper to taste.
Assemble the dish:
Add the boiled pasta to the sauce and stir well.
Add the sun-dried tomato and spinach mixture to the pasta and stir gently.
If the sauce is too thick, add a little of the pasta cooking water.
